Queso Sloppy Joes
- 1 pound Certified Angus Beef® ground beef
- 1 tablespoon fajita seasoning
- 1 teaspoon ancho chili powder
- 1 teaspoon paprika
- 1 teaspoon kosher salt
- 1/2 teaspoon ground coriander
- 1/2 teaspoon black pepper
- 1/4 teaspoon cayenne
- 1 tablespoon canola oil
- 1 medium yellow onion, diced
- 1 (10-ounce) can Rotel diced tomatoes with green chiles
- 1 (4-ounce) can green chiles
- 1 cup shredded Mexican cheese blend, divided
- 5 ounces Velveeta cheese
- 1 tablespoon sour cream
- 1 pack (6 to 8) hamburger buns

Ground Beef
In a small mixing bowl, combine fajita seasoning, chili powder, paprika, salt, coriander, pepper and cayenne; set aside. Preheat oven to 400°F.
Heat a 12-inch skillet to medium high and add canola oil. Add ground beef; chop and spread out with spatula, searing for 3 minutes to brown one side. Add spice blend and onions; break up beef into smaller pieces until no pink remains and onions are softened, 3 to 5 minutes.
Reduce heat to medium low; stir in diced tomatoes and extra green chiles. Add Velveeta cheese while constantly stirring until it starts to soften. Stir in 2/3-cup shredded cheese.
With cheese fully incorporated, reduce heat to low, gently stir in sour cream, and then turn off heat, keep warm.
Open buns and lay flat on a sheet tray; cut sides up. Lightly coat with cooking spray. Toast in oven until golden brown, 3 to 5 minutes. Scoop beef mixture onto buns, top with remaining shredded cheese and serve.
