

Ribeye with Jicama and Grilled Watermelon Slaw


- 4 (16-ounce) Certified Angus Beef ® ribeye steaks
- 12 small slices watermelon
- 1 small jicama, julienned
- 1 small pear, julienned
- 1 shallot, finely chopped
- 1 clove garlic, finely chopped
- 2 tablespoons cilantro, chopped

Ribeye Steak

Grill watermelon over medium heat (fruit should have grill marks but still be firm).
Season ribeye steaks with salt and pepper; grill over medium high heat until desired doneness.
In medium bowl, gently toss together jicama, pear, shallot, garlic and cilantro. Garnish salad with grilled watermelon.
